Grilled Zucchini Boats

While I use my BBQ all year ’round, this recipe just happens to be stellar when you use fresh zucchini straight from the garden (or farmers market). It gets blown over the top when you add garden fresh tomatoes and garlic. Oh my!

 

What you need

1 zucchini per person
1/2 c cooked ground meat of choice, per person (I used turkey, but chicken or beef will work just as well)
handful of grape tomatoes, per person
1 Tbsp fresh basil, chopped, per person
1 Tbsp crumbled goat cheese, per person
avocado or grapeseed oil to brush zucchini with

 

What you do

  • Pre-heat BBQ
  • Wash zucchini and cut length-twise in half
  • Scoop out the seeds in the middle with a spoon and discard
  • Brush zucchini boats with avocado oil
  • Grill tomatoes on the Q in a veggie basket or BBQ tray until soften and seared
  • Meanwhile sear zucchini on each side on the hot BBQ until warmed through
  • Fill the cooked zucchini boat with warmed ground meat, tomatoes, basil and goat cheese

 

Keep the moaning to minimum or your neighbours might want to come for dinner ;  )
