Easy Peas-y Curried Crunchies

What you need

2 c cooked chick peas (use canned if you like or prepare your own by soaking & cooking)
2 Tbsp grape seed oil or coconut oil
1 tsp curry powder
1/2 tsp garlic powder
pinch or 2 sea salt

 

What you do

  • Preheat oven to 400 degrees
  • Rinse, drain and pat dry the chick peas on a paper towel. Ensure there is no moisture remaining in the peas. This will yield crunchier snacks – well worth the effort now
  • Place dried chick peas on a baking sheet and drizzle 1 Tbsp of oil over the peas to coat them well. Bake the oil cover peas in the oven for about 15 minutes
  • Meanwhile mix together the remaining oil and spices in a small mixing bowl
  • After the peas have baked for about 15 minutes, remove the pan and pour the mixture of oil and spices on top and mix well to coat the peas
  • Return the baking sheet to oven and continue to bake until peas are crunchy and done (about an additional 30 – 45 minutes) stirring the peas occasionally while baking
  • While it’s not necessary, it is helpful to cool the peas in the oven with the door open and the oven turned off vs. cooling them at room temperature. This technique helps makes the peas more crunchy if you like that sort of thing (like I do)
  • Enjoy as a snack. These peas will keep in a covered container for about a week, however they seem to get moist after a day or two in a storage container, but are still delicious even if they don’t retain their crunch factor
