Coco Nut Power Balls

Here’s a recipe for a quick little bite of protein and fat when you need a little a boost of energy and to help you fill your tank (a.k.a. belly).

What you need

1 1/2 c cashews (raw)
6 medjool dates, pits removed
1/2 c nut butter (I used Rainforest nut butter with coconut. It has cashews, brazil nuts and coconut)
1 c unsweetened coconut (shredded or flaked)
1 scoop protein powder of choice (vanilla would work great but I used coconut/almond from Vega)
2 Tbsp coconut oil, softened

Optional: 1/4 c unsweetened coconut, shredded for rolling

 

What you do

  • in a food processor (or blender) process the nuts until they are small ground pieces, but not as fine as bread crumbs –  you still want some chunkiness to them
  • add in dates and continue to process until a sticky mixture is formed, then add in remaining ingredients and stir or process until all ingredients are well combined
  • with clean wet hands, scoop out 1 tsp of the mixture and roll into balls
  • optional: roll the balls in unsweetened shredded coconut to coat them
  • place the formed balls on a flat plate or tray and refrigerate for 1/2 hour to hour to firm them up
  • enjoy them as little snacks or power balls throughout your day
